Honest answer: Pilates is as hard as you make it, and it's usually harder than people expect while being far more achievable than they fear.
It's hard in the sense that it demands concentration. You're moving slowly, with control, thinking about your breath, your alignment and your centre all at once. That mental focus catches people out more than the physical effort does. Plenty of very fit people leave their first class surprised at how much small, precise movements can take out of them.
It's not hard in the sense of being punishing, competitive or exhausting. There's no shouting, no burpees, no keeping up with anyone. You move at your own pace, you rest when you need to, and nobody notices or cares if you sit one out.
The clever part is that every exercise is layered. The same class contains a foundation version, a middle version and a properly challenging version, so the person next to you might be working far harder than you are, or far less, and you'd barely be able to tell. You choose your level, and it changes from week to week depending on how your body feels.
So yes, it'll challenge you. No, it won't defeat you. That's the sweet spot we aim for.
